Step one in throwing an authentic Swedish Easter brunch would have to be the smörgåsbord. Consider dishes like pickled herring, cured salmon, deviled eggs, crisp bread, cold meats, and cheese. If you’re really ambitious, you might want to try your hand at making Jansson’s Temptation, a creamy casserole that contains potato, onion, and pickled anchovies. Other popular smörgåsbord dishes include Silltårta, a savory herring cake, and Toast Skagen, which is toast topped with prawns and roe, among other things. You may also want to serve hot meats, such as lamb, roast, or fish.

The next important component in a Swedish Easter brunch is the sweet stuff. Candy is central to a Swedish Easter celebration, but so is pastry. Cinnamon buns are always a favorite, but if you really want to be authentic you might want to try your hand at making a more complex dessert. Semlor are cardamom and cream stuffed pastries traditionally eaten on Fat Tuesday, but too delicious to have on only one day. Princess cake is a traditional Easter treat, made by layering sponge cake, custard or cream, and raspberry jam and then covering the whole thing with bright green marzipan. It’s a pretty labor intensive dessert, but well worth the extra effort.
